Preheat & Prep
Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper (leave overhang).
Make Apple Filling
In a bowl, mix diced apples, brown sugar, lemon juice, cinnamon, and cornstarch. Set aside.
Make Base
In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon. Add melted butter, egg, and vanilla. Mix until crumbly.
Assemble
Press half of the oat mixture firmly into the bottom of the prepared pan. Spread apple filling evenly over the top. Sprinkle remaining oat mixture over the apples, pressing lightly.
Bake
