In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon. Add melted butter, egg, and vanilla. Mix until crumbly.

Press half of the oat mixture firmly into the bottom of the prepared pan. Spread apple filling evenly over the top. Sprinkle remaining oat mixture over the apples, pressing lightly.

Bake 30-35 minutes until golden brown. Cool completely in pan before lifting out and cutting into bars.
