These beef hand pies are hearty, portable, and dangerously easy to make. Eat them hot, warm, or straight from the freezer when hunger strikes.
Cook the Filling
Brown ground beef and onion in a skillet over medium heat, about 5 minutes. Drain excess fat.
Stir in cooked potato, gravy, salt, and pepper. Cook 2 minutes. Let cool slightly.
Prep the Pastry
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Cut each puff pastry sheet into 3 rectangles (6 total).
Assemble
Spoon filling onto one half of each rectangle. Leave a ½-inch border.
Brush edges with egg wash. Fold over and press with a fork to seal.
Bake
Brush tops with egg wash. Cut a small steam slit.
Bake 18–20 minutes until golden. Cool 5 minutes before eating.
